Homemade coconut-rolled fudge nut balls

J and I tried to make chocolate bars, but had trouble mixing the oil with the cocoa and honey, so we ended up throwing out most of the oil and rolling the chocolate into balls. This is what we came up with. Don't blame me if you make a mess, I think getting messy is part of the process on this one! 1 cup coconut oil, warmed to room temperature 1/2 cup raw, organic honey 1/2 cup coarsely chopped pecans 1 tsp vanilla 1/2 cup shredded coconut 1/4 cup unsweetened cocoa powder a dash of sea salt in a double-boiler, heat the coconut oil to room temperature in a food processor, mix the cocoa powder, salt, and chopped pecans with the honey and vanilla until it becomes a paste add the coconut oil until you get the consistency you need (for chocolate bars, the whole cup of oil, for fudge nut balls, just enough to get the mixture moist) pull sections of the paste and roll them into small balls on a separate plate roll the balls on a pile of shredded coconut place on parchment paper and put into the refrigerator for 20 minutes enjoy
